Chocolate Anatomy

Our main focus in creating a confection is flavor. As we learned from our father, Master Pastry Chef Wilhelm Wanders: "The flavors should be so clean and defined that you can immediately recognize them - even with your eyes closed."

The ganache is the centerpiece and should be the main attraction. 

To achieve this, the outer shell of the chocolate must be as thin as possible. Putting this theory into practice, we do not use molds to form our chocolates. Instead, we handcut and/or pipe our ganaches and enrobe them with one thin layer of chocolate. The result is a confection that melts slowly and smooth on your tongue leaving nothing but flavor behind.
